A big statement to make, right? You know I wouldn’t lie to you – this really is the easiest lemon drizzle cake recipe ever – as well as being the tastiest I might like to add.

With the launch of the new season of Great British Bake Off over on BBC this week, I decided to put together one of my more successful bakes in the kitchen and share how you can whip this lemon goodness up in less than 40 minutes, thanks to the lady herself, Ms Mary Berry.

All you need is:

2 medium eggs
3oz/90g caster sugar
3oz/90g self-raising flour
3oz/90g soft butter
1/2 teaspoon baking powder
Zest of one lemon

Preheat the oven to 180/Gas Mark 4 and line or butter the sides of a 1lb baking tin. Mix everything together in a bowl until smooth and add to the oven for 30 minutes or until spongy and golden brown.

Once removed from the oven, prick holes in the top of the cake with knife and mix the juice of one lemon and 50g/2oz of granulated sugar together and pour over the top.

After this has cooled and the topping is crispy, remove from tin and serve. The lemon sugar should have hardened around the delicious cake, making it even more lemony. This is the perfect light dessert to have with coffee to treat your mum or friends to.
